Date and Cacao Spread

Here I finally am again with a new recipe.

My sister and I came up with this amazing date spread a few months ago. I just never came around to taking pictures for a blog post, as I’ve been busy studying for my final exams.

I love this recipe because it’s so simple yet so delicious. It is very sweet but uses only the natural sweetness of dates as well as rice milk. It makes a great alternative to some overly sugared spreads that you can buy at a supermarket. It is healthier and an interesting variation.

I’m usually all for my muesli in the morning, however this spread has made me enjoy a slice of bread every now and again.

Refreshing Gazpacho

Soup is something that most people only eat in winter. It’s comforting and warms you up when the temperatures are very low. But why not have a cold soup in summer?

Gazpacho [gaθ’patʃo] is a soup from Spain made with mainly cucumber, tomatoes and pepper which is served cold. It’s a refreshing and hydrating soup for those really hot summer days. All the vegetables in this recipe are uncooked and it is full of nutrients and vitamins to energize you.

And the best thing is: It is really easy to prepare. All you have to do is chop the vegetables and blend them in a food processor.
